He literally asks you out for a drink, and obviously this can be interpreted however you/your WoL wants to interpret it, but they deliberately had him be nervous and a little awkward about it -- he loudly goes OH AND ONE MORE THING and then realizes he was loud and backpedals into going ummmmm sooooo you wanna get a drink?????

Even Thancred notices it! This is after you agree to fight for Ishgard in the grand melee. I didn't get a screencap of it but before this Thancred says something about Aymeric loving you -- he doesn't mean it romantically, or at least not straight-forwardly so, but he's definitely in general waxing about how Aymeric is doing an emotion.
My genuine take is that I do think Aymeric is written deliberately shippy -- it's a Final Fantasy game and they want your player character to be immersed into the world, which involves romance options. It's not a game that has romance options the way a game like, say, Mass Effect does, but it definitely encourages you to make your own story. Aymeric can be read as a closed-off man who becomes emotionally close to the WoL, or as a closed-off man who becomes, you know, emotionally close to the WoL. It's also just as easy to read him as being shippy with Lucia, his second-in-command, so it really is dealer's choice,
